    Creamy Shrimp Florentine Pasta

    Who doesn't love a good pasta? You can literally toss anything together with some noodles and create something special. This pasta is super easy, super tasty, and super creamy. Who doesn't love a creamy pasta? And pasta with seafood... SOLD! This Creamy Shrimp Florentine Pasta is a quick one too so you can make this after you come home from work and won't even break a sweat.


    Ingredients

    Serves 4

    Creamy Shrimp Florentine Pasta


    12 ounces of shrimp
    2 tbsp butter
    1 small onion (diced)
    1/2 cup white wine
    4 tsp garlic
    1 3/4 cups half & half
    1/3 cup sun-dried tomatoes (julienne)
    3 cups of spinach
    2/3 cup shredded parmesan cheese
    2 tsp Italian seasoning
    Salt & pepper to taste
    8 ounces fettuccine
    1 tbsp chopped parsley

    Take all the shrimp and put into a bowl for defrosting if frozen. You can use any sized shrimp you want and if you want to leave those tails on, go for it! I personally think although pretty, tails get in the way when I'm trying to eat pasta. It slows me down lol

    Cover with cool water and sit to the side.

    Fully defrosted. Just have to drain and we can start cooking!

    Cook the pasta according to the box directions. Put the pasta in the pot of boiling water and DO NOT BREAK THE PASTA!

    Once the pasta starts to cook it will fall right into the water like so. I cooked the pasta for about 11 minutes.

    Melt the butter into a large pan like so.

    Add the garlic to the pan.

    Cook for 30 seconds to a minute until that garlic is fragrant.

    Add shrimp to the pan and cook for 5 minutes on a medium-high heat.

    Take the shrimp out and sit to the side.

    So this is what your pan should look like. Don't rinse it you want all the flavor.

    Add onions and cook for about 2 minutes.

    Reserve some of the pasta water for later on in the recipe.

    It should be time to take that pasta out so drain the pasta and let that hang out.

    Add the white wine to the pan. I used Sauvignon Blanc but if you have Pinot Grigio that will work too. I wouldn't add a sweet wine like Riesling to this.

    Be sure while you are deglazing the pan with the wine that you are scrapping up all the tasty bits from the bottom of the pan. That is flavor my friends. Let that reduce by half.

    Time to add in the sun-dried tomatoes and cook that for 2 minutes.

    Add the half & half, salt, and pepper. Turn heat down to medium low and stir.

    Add the spinach.

    And stir until spinach is wilted.

    Add the parmesan cheese and stir until well combined.

    Add the Italian seasoning and stir to combine.

    Time to add in the pasta.

    Mix everything together. You may notice that you need to add some liquid to help out in this step, that's where the reserved pasta water comes in. Add a little at a time until it starts to loosen up a little like so.

    Add in the shrimp and lightly toss.

    Top with parsley and you are ready to enjoy some pasta!
