Searing the chicken first in a hot cast iron skillet is really where that charred crispy chicken skin comes in and adds a textural contrast to the juicy meat. If you like spicy food you will love this spicy korean chicken recipe. I cooked it as part of my meal plans but it would be great for a busy weeknight dinner. Its a simple recipe and a delicious dish that you will find yourself making often.

    Brown Sugar- In this recipe I opt for dark brown sugar because it has a richer flavor over light brown sugar. If light is all you have, it will work fine.

    Gochujang- The star of the dish! Gochujang is also known as Korean chili paste or Korean red pepper paste. It is spicy so if you like heat add more and if not scale back some. Gochujang also comes in different heat levels, medium-hot.

    Let's Cook This Gochujang Chicken Recipe

    Add soy sauce, gochujang paste, brown sugar, grated ginger, and garlic paste into a large bowl and stir to create the marinade.

    Add chicken to the bowl and coat evenly with the gochujang sauce. You can let marinate for at least 1 hour or overnight.

    Preheat oven to 375°. Sear marinated chicken on both sides for 4 minutes in oven safe skillet over medium-high heat. Throw out the reserved marinade. I prefer a cast iron skillet because it retains heat and oven safe. If you don't have an oven safe skillet, cook on the stove in a large pan then transfer to a sheet pan lined with foil or parchment paper.

    Place chicken in the oven and cook for 25 minutes.

    Gochujang Chicken Thighs

    Serve chicken while it's nice and hot. Serve garnished with green onions or sesame seeds.

    Where to buy gochujang?

    If you can not find it in the asian section of your local supermarket you can find it at asian markets. They also have it on amazon here.

    Can I use other parts of the chicken?

    Absolutely! This would be delicious on chicken wings, chicken breast, chicken tenders or whole chicken. If using those pieces, I wouldn't sear them first and those pieces of chicken cooks at different time. Personally, all pieces of chicken would be delicious with this gochujang sauce.

    What can I serve with gochujang chicken?

    I served it with brown rice and green beans. White rice would work as well as another vegetable like broccoli. Serving with sweet potatoes to create the perfect balance of sweet and spicy is also a great idea.

    Ingredients

    • 4 Chicken Thighs
    • 4 tbsp Gochujang
    • 2 tbsp Soy Sauce
    • 1 tbsp Dark Brown Sugar
    • 1 tbsp Garlic Paste
    • 1 tbsp Grated Ginger

    Instructions

    • Combine all ingredients except chicken in a mixing bowl and mix well to combine and create marinade.
    • Add chicken thighs and coat evenly with marinade. Marinate for 1 hour or overnight.
    • Preheat oven to 375°. In a hot oven safe skillet, sear chicken thighs skin side down for 4 minutes then flip and cook for additional 4 minutes.
    • Transfer skillet to oven and cook for 25 minutes. Serve while hot!
