Jamaican Brown Stew Chicken

Ingredients – 4 skinless chicken drumsticks – 4 skinless chicken thighs – 1 scotch bonnet pepper – 1 green bell pepper diced – 1 onion diced – 1 tbsp brown sugar – 1 tbsp browning – 2 tbsp ketchup – 1 bay leaf – 1/2 tsp all spice – 1/2 tsp dried thyme – 1/2 tsp ground ginger – 1/2 tsp paprika – 1/2 tsp salt – 1/4 tsp black pepper – 4 cloves garlic minced – 3 green onion sliced – 2 tbsp olive oil – 2 cups chicken broth

Combine chicken, green pepper, onions, green onions, garlic, all the spices, and browning. Set for at least 30 minutes.

Remove the chicken from the marinade. Keep the marinade to the side.

Heat olive oil in a dutch oven over medium-high heat. Brown the chicken for 2-3 minutes per side then remove.

Lower to medium heat and add reserved marinade to the pot and cook for 5 minutes.

Add chicken broth, ketchup, bay leaf, and scotch bonnet to the pot and sir to combine.

Add chicken into the pot and bring the stew to a boil. Lower heat to medium-low and cover cooking for 1 1/2 hours.

Remove the lid and continue to cook for 10 minutes to reduce the rich brown stew gravy.
