Mangú Con Los Tres Golpes
Bring a small pot of water to boil over medium heat and add salt. Add plantain, cover and cook in salted water for 15 minutes. (Make sure to use just enough water to cover plantains.)
Meanwhile, heat vegetable oil or canola oil over medium-high heat. Add slices of salami and cook for a 2-3 minutes on each side. Remove to drain on paper towel lined dish.
Add frying cheese to oil and cook on each side for 3-4 minutes until golden brown. Remove and set aside on paper towel lined dish.
Drain water from plantain reserving a cup of the water. Add butter and a little reserved liquid and mash plantains with a potato masher until smooth. Top with pickled onions.
