Pollo Guisado (chicken Stew)

Ingredients – 4 chicken thighs  – 4 chicken drumsticks – 1 tsp salt – 1/4 tsp black pepper – 1/4 tsp dried oregano – 1 tsp garlic powder – 1 tbsp adobo seasoning – 1 tbsp olive oil – 1 small onion sliced – 1 small green bell pepper sliced – 2 tsp garlic minced – 2 tbsp sofrito – 1/4 cup olives – 1 cup diced potatoes – 1 packet chicken bouillon – 1 packet sazon – 2 cups water – 1 bay leaf

Heat olive oil in a dutch oven or large pot over medium-high heat. Season chicken with adobo, garlic powder, dried oregano, salt, and pepper. Brown pieces on both sides for 4-5 minutes.

Add onions, peppers, garlic, and sofrito and cook for 2-3 minutes.

Add potatoes, olives, tomato sauce, sazon, chicken bouillon, water and bay leaf to the pot and bring to boil.

Place chicken back into the pot. Reduce heat to low heat and cook for 40 minutes until chicken is cooked through and potatoes are tender.
