Preheat oven to 450°.
Cook bacon in pan until crisp and set on paper towel to drain. Reserve 1 tbsp of bacon fat.
In a mixing bowl add brussel sprouts, 2 tbsp of balsamic, olive oil, bacon fat, garlic, salt, and pepper then lightly mix.
Transfer to a foil lined baking sheet and bake for 25 minutes.
Mix together the remaining tablespoon of balsamic and honey.
In a bowl combine the brussels sprouts, chopped bacon, and honey balsamic mixture. Gently mix.
