- 2 peaches sliced
- 3/4 cup milk
- 3/4 cup flour
- 4 large eggs
- 4 tbsp butter melted, divided
- 1/2 tsp cinnamon
- 1 tsp vanilla extract
- 3 tbsp sugar divided
- 1/4 tsp salt
Preheat oven to 425° with cast iron inside.
To a blender add flour, milk, salt, cinnamon, eggs, vanilla, 2 tablespoons butter, and 1 tablespoon of sugar. Blend for about 30 seconds to make the batter.
Carefully remove skillet from the oven and add remaining butter and sugar. Stir to dissolve the sugar. Add peaches and stir to coat.
Arrange peaches in one layer and then pour the batter over the peaches. Put skillet back in oven and bake for 25 minutes.
