I love potatoes! They are so versatile and you can cook them in so many ways. This recipe is focused on the roasting of potatoes. You'll notice like in the mashed potato recipe, I love parmesan cheese. I feel like cheese and potatoes are one. Parmesan cheese for me works best because it brings saltiness to the potatoes which they need. The skin gets crispy and the potatoes are soft and fluffy. This recipe is so easy to prep for and most of the time the potatoes are in the oven giving you time to do other things. These potatoes have simple ingredients that pack flavor. It will sure to be a go to side.
4 medium potatoes cut into pieces
1 tbsp melted butter
1 tbsp olive oil
2 tsp garlic
1/4 tsp Italian seasoning
1/4 cup shredded parmesan cheese
Salt & pepper to taste
Preheat oven to 400° and line a baking sheet with foil that is sprayed with cooking spray. Makes for easier clean up.
Place potatoes in a mixing bowl.
Add in the butter, olive oil, parmesan cheese, garlic, Italian seasoning, salt & pepper.
Mix it all together like so.
Place in the oven and bake for 40 minutes.
