    Easy Shredded Chicken

    Sometimes you come across situations where the recipe you are trying to make requires shredded chicken. It's such a blank canvas and can be used in a number of things. You don't have to go out and buy a precooked rotisserie chicken and work from that. You always appreciate it more when it's done yourself anyway. It's easy to do and will be quick, moist, and flavorful. It's also something everyone should know how to do, consider this cooking 101.

    Cooking the Chicken to Shred

    • seasoned chicken in pot
    • flipped chicken
    • adding chicken broth
    • simmering chicken

    In a dutch oven heat the olive oil and then add seasoned chicken breasts. After 4 minutes flip over and cook for another couple of minutes. Add in chicken broth and then cover. Cook for 10 minutes.

    Remove chicken from pot and place on a plate or large bowl. With 2 forks pull chicken apart. It should shred easily. Add a little of the chicken broth to keep it moist.

    Can you freeze the shredded chicken? Yes you can! It will freeze for 2 months.

    How long can you store shredded chicken in the fridge? It will keep in an air tight container for 3-4 days.

    Can you use mixer to shred chicken? I've never done it but I have seen it done. I would just watch the speed and time used to shred the chicken. It will shred fast when hot and if you shred it too long it may make the chicken mushy from being over mixed.

    Ingredients

    • 2 chicken breast
    • 1/2 tsp onion powder
    • 1/2 tsp garlic powder
    • 1/2 tsp salt
    • 1/2 tsp pepper
    • 1 tbsp olive oil
    • 3/4 cup chicken broth

    Instructions

    • Heat oil in dutch oven on medium heat.
    • Season one side of chicken breasts then place seasoned side down in pot. Cook for 4 minutes and then flip over. Cook for 2 minutes
    • Pour in chicken broth then cover and cook for 10 minutes.
    • Remove chicken from pot and shred with 2 forks. Pour in some broth to keep chicken moist.
