I remember wondering if I liked brussel sprouts because I know it's a vegetable that a lot of people do not like. I decided to pick a bag up one day and threw bacon in it and found out that roasted brussel sprouts actually aren't bad at all. Everyone knows bacon makes everything better which is why I decided to put some in this recipe but without them, they were still good. If you are not sure if you like them yourself give this recipe a try because it will change your mind. Already like brussel sprouts? You will LOVE this recipe!
Roasted Brussel Sprout Ingredients
I would suggest using fresh brussel sprouts for this recipe. Using frozen brussel sprouts will release a lot of water while trying to roast them which will ultimately steam them.
How to make Roasted Brussel Sprouts
First you want to cut the bottom stem of the brussel sprout and then cut them in half lengthwise. You can get rid of any soggy or turned outer leaves as you are cutting them. Some leaves will fall off while cutting and that is fine. Add them to the bowl because they will make for nice crispy pieces when roasted
Chop bacon and cook until nice and crispy. Drain the bacon on a paper towel and set aside. Reserve the bacon fat.
In bowl of brussel sprouts add 2 tbsp of balsamic, olive oil, bacon fat, garlic, salt, and pepper then lightly mix. Transfer to a foil lined baking sheet and bake for 25 minutes in a preheated 450° oven.

Tips and Questions for Brussel Sprouts
Can I make roasted brussel sprouts without the bacon? Of course! Just skip the cooking of the bacon and omit the bacon grease from the recipe.
Can I make roasted brussel sprouts with turkey bacon? Sure! Turkey bacon isn't going to give off fat like pork bacon does. Cook the turkey bacon until crisp while roasting the brussel sprouts. Crumble and toss in with the honey balsamic mixture.
