Spinach is the easiest vegetable to cook which is why when you have to make dinner on the fly, this should be your go to. Don't be scared to buy your spinach in bulk because it will wilt down to a fraction of it's original size. It's super quick and only needs a few simple ingredients to make it taste great.
1 12 ounce bag of spinach
2 tbsp of extra virgin olive oil
1 tbsp of minced garlic or 3 cloves of garlic
Salt & pepper to taste
wedge of lemon
Heat olive oil in a deep pan.
Add garlic and stir for 30-60 seconds
Add in spinach
Stir the spinach as it starts to wilt down and add in salt & pepper.
Once cooked squeeze over some lemon juice and stir.
Serve while it's hot!
