Instead of roasting potatoes which is usually my go to way of making potatoes as a side, I decided to make garlic mashed red potatoes to go with dinner. So they wouldn't be just your ordinary mash I decided to use red potatoes and leave the skin on while adding garlic and parmesan cheese because who doesn't love cheese? This mash won over my mother who doesn't go for mash as her potato option so I'm sure it will go over in your house.
Ingredients
Serves 4
5 medium sized potatoes
2/3 cup half & half
1/3 cup shredded parmesan cheese
2 tbsp butter
1 tbsp garlic powder
Salt & Pepper to taste

Wash and cut the potatoes into quarter to help cook faster
Transfer potatoes to a put and cover with water. Bring to a boil and then simmer for about 25 minutes.
Drain potatoes and transfer to a mixing bowl.
Add half & half, butter, garlic powder, salt and pepper and mash with a potato masher.
Add parmesan cheese and mix in then serve!
