Ingredients

Dough

  • 3 cups flour
  • 1 1/4 cups water
  • 1 tbsp curry powder
  • 1 tbsp turmeric powder
  • 1 tsp kosher salt
  • 1 1/2 stick cold butter

Beef Filling

  • 1 1/4 lb ground beef
  • 1 tbsp olive oil
  • 1 onion diced
  • 1 scotch bonnet pepper seeds removed, finely chopped
  • 4 cloves garlic minced
  • 1/2 tsp allspice
  • 1 tsp dried thyme
  • 1/2 tsp black pepper
  • 1 tsp kosher salt
  • 1 tsp curry powder
  • 1 tbsp Worcestershire sauce

Egg Wash

  • 1 egg
  • 1 tbsp water

Instructions

  • In a large bowl make flour mixture by combining all purpose flour, curry powder, turmeric, and salt. Add in cold butter and mix with your hands to create little pea sized crumbles to make a flaky dough.
  • Add cold water slowly and mix together until a dough is formed.
  • Form even small circles of dough for the individual beef patties. I was able to make 14. Set in fridge for half hour while the meat filling is being made.
  • Heat olive oil in a large skillet over medium heat. Add onion, garlic, and scotch bonnet and cook for 2-3 minutes.
  • Add in ground beef and cook until browned, breaking up with a wooden spoon. Drain some fat if necessary.
  • Add curry powder, allspice, thyme, salt, black pepper and Worcestershire then mix. Reduce to low heat and simmer for additional 5 minutes.
  • On a lightly floured work surface, roll out a ball of pastry dough with a rolling pin. Add ground beef filling to bottom half of the dough circles and fold dough over to make half moons or have squares. To close open edges of the dough, press down on the opening with the tines of a fork to close patty and create a design.
  • Place on a parchment paper lined baking sheet in a single layer and refrigerate for 10 minutes to help them set. Once out the fridge, brush each patty with egg wash. Pre heat oven to 375° and bake for 20-25 minutes.
