Pickled red onions are good on things like tacos, sandwiches, burgers, salads, nachos, and a whatever else you can think up. It's a great accompaniment for spanish dishes as well. It's super easy to make and will keep in your fridge for a few weeks. Make these easy picked red onions and you'll see just how often you reach for them.
Ingredients
1 cup warm water
1/2 cup apple cider vinegar
1 tbsp sugar
1 1/2 tsp kosher salt
1/2 red onion
(you can do a whole onion but my jar is small)
Cut the onion in to thin slices.
Add the onions to your jar.
I brought water to a boil then turned the heat off and let it sit for a couple minutes. Then I added the sugar, salt, and vinegar.
Mix it together until the sugar and salt is completely dissolved.
Add the onions to a jar and then pour the liquid on top of the onions and fill to the top.
Look at that beautiful pink color that they take on after 1 hour. If you have to have them quickly wait at least an hour before eating them so that it has enough time to pickle. It turns out I could've added more onions to my jar.
