Spaghetti squash shrimp alfredo is my favorite way to enjoy a spaghetti squash. You can make them in so many different ways with a variety of sauces, but this one always brings me back. The spaghetti squash is the perfect vessel to hold the light "noodles", creamy sauce, plump shrimp, and cheesy crust.

Not to be confused with the butternut squash which is also a winter vegetable, the spaghetti squash is the only one that can create the strands needed for the pasta hence the name. Of course there are butternut squash noodles like there are zucchini noodles, but they require a tool to create the noodles. It's the perfect time to give it a try because they are in season now.
Good news with this recipe is that it's a healthy pasta alternative for those of you that are on a low carb diet. The bad news is this is not a healthy food recipe with all the cream and cheeses. I can guarantee that this is a delicious recipe and will be made over and over again.
Spaghetti Squash Alfredo Ingredients
Spaghetti Squash- The size of your squash will depend on what half of it would be the perfect serving size for a person. I tend to go more on the smaller side.
Shrimp- I use large shrimp, approximately 12. You can use a smaller size so you have more shrimp in every bite.
Heavy Cream- This is used to make the homemade alfredo sauce.
Cheese- Parmesan cheese is used in the sauce and mozzarella cheese is used for the topping.
Let's Make This Spaghetti Squash Recipe!
On a cutting board or flat surface, carefully cut spaghetti squash in half using a sharp knife. Using a spoon, remove the seeds from inside of the squash.
On a foil or parchment paper lined baking sheet, brush the flesh side with a little olive oil and season with salt and black pepper.
Flip the squash over so it is skin side up and roast in a 400° oven for 30 minutes. Remove and let cool.
Season shrimp with cajun seasoning.
Heat one tablespoon of olive oil in a skillet. Cook shrimp on each side for about 3 minutes. Remove and set aside.
Using the same skillet, melt one tablespoon of butter. Add garlic and cook for 30 seconds until fragrant.
Add flour and stir for 1 minute to cook out the flour flavor. Pour in heavy cream and stir until smooth.
Add parmesan cheese, italian seasoning, salt and pepper. Cook for 3-4 minutes to make pasta sauce.
Using a fork, create long spaghetti strands of noodles in each half of the squash.
Turn off heat from sauce and add the spaghetti squash strands and shrimp. Mix well to combine.
Add the sauce to the spaghetti squash skins and top with mozzarella cheese.
Broil for 2-3 minutes.

- 12 large shrimp
- 1/2 cup mozzarella cheese
