Crock pot smothered pork chops are some of the best pork chops you will have. Smothered Pork Chop Ingredients
Pork Chops- I prefer bone-in pork chops because it adds extra flavor but you can also opt for boneless chops as well. I thick-cut pork chops are better for this recipe over thin pork chops because the slow cooker is going to break it down and you don't want them to fall apart too much. The cut is up to you, if you want to do center cut or rib chops.
Root Vegetables- The sides of potatoes and carrots will be cooking as the slow cooker as well as onions and garlic for flavors.
Let's Make Some Homemade Smothered Pork Chops
Pat dry pork chops with paper towels and then season with salt, pepper, onion powder, and garlic powder.
In a large skillet, heat olive oil over medium-high heat. Sear pork chops for 3-4 minutes on each side. Work in batches so you do not steam the pork chops and allow them to get color. Set aside.
In the same pan, add onions and cook for 2 minutes stirring occasionally. Add garlic and stir for 30 seconds.
Lower to medium heat and pour white wine into the pan. Using a wooden spoon scrape up any browned bits from the bottom of the pan. We want to deglaze and get all of that flavor. Cook for 2-3 minutes.
Add chicken broth, half and half, Worcestershire sauce, Italian seasoning, and crushed red pepper to the skillet and stir to combine. Cook for 2-3 minutes and remove from heat.
At the bottom of the crock pot, add potatoes and carrots and season with salt and pepper. Place pork chops on top of the vegetables and pour in any accumulated juices. Lastly, pour gravy mixture over the pork chops.
Cook on high for 3-4 hours to get food to the dinner table fast or low for 6-8 hours to give yourself time to get other things done well dinner is being cooked.
Once done, carefully remove tender pork chops from the slow cooker. They may break apart. The using a slotted spoon, remove the vegetables.
In a small bowl, mix corn starch and cold water to make a slurry to add to the gravy mixture in the crock pot. Stir then cover and cook on high for 5-10 minutes to thicken.
Serve pork chops with gravy on top and vegetables on the side and enjoy!

- 1/2 lb baby carrots
- 1 tbsp corn starch
- 1 tbsp water
- salt & pepper to taste
